Combine the two mixtures and with constant stirring bring to a boil in a double boiler. Add 1 1/4 cup cooked pumpkin and (to taste) 1/8-1/4 cup dark rum to taste (Sailor Jerry's is most awesome). Mix well and let cool. Beat 3 egg whites with 1/3 cup powdered sugar. Fold egg whites into cooled pumpkin mixture and pour into cooked, cooled pie shell. Refrigerate until firm. Top with whipped cream.

Crab Imperial
1 pound lump crabmeat (canned crabmeat from Costco works well)
juice of about 1/4 lemon
1/4 tsp salt
dash fresh ground pepper (to taste)
1/2 tsp prepared mustard (I always use Grey Poupon)
1 tbs capers (these are a must!!)
~ 1/4 cup mayo
sterilized crab shells or shallow baking dishes
melted butter
paprika
Combine crabmeat, lemon juice, salt, pepper, mustard, capers and mayo in bowl. Mix carefully trying not to break up crabmeat lumps if possible. Pack mixture into the shells or dishes. Brush with melted butter and lightly sprinkle with paprika. Preheat oven to 425 and bake for about 15 minutes or until golden brown.
We're huge Texas Roadhouse fans! This is our local go-to steakhouse. We've been in 3 out of the 5 locations in CA. Just wanted to share my fav 20 oz Bone-In Ribeye Steak Med-Rare. I've tried their rubs for steak and pork purchased online and it turned out pretty good... ;)

Fully Cooked Ham (7 to 8 lbs.) Brown Sugar, about 1 1/2 Cups Sliced Pineapples (optional) Coke
Place the ham in a large baking pan, cut side down. Combine the sugar with enough Coke to create a thick sauce. Mix with a spoon until you get a syrup like consistency. Pour the glaze over the ham. Pour the remaining Coke into the pan. Cover it with foil and bake at 300 degrees for about a couple of hours; until it’s heated through, basting every now and then (I normally pull it out when the internal temperature hits 140 degrees).
When done, slice up the ham, spoon sauce from the pan over the meat and enjoy!
You can tweak this fool-proof recipe according to your liking. I’ve added canned sliced pineapples and placed them on top of the ham before pouring the glaze and it turned out pretty good…
one of my fav Christmas cookies......my mom's recipe---
Mexican Bride's Cookies
2 cups flour
1/2 cup shifted powdered sugar
2 sticks sweet butter - softened
1 cup finely chopped pecans (use Arizona pecans....they are the best!!!)
1 tsp vanilla extract
Mix flour, sugar and nuts together. Stir in the vanilla. Work butter into the mixture until it forms a ball (use a mixer....).
Shape into small balls about 1.5" dia, and place on un-greased cookie sheet (parchment would work well)- bake at 325 till cookies are very delicately brown (about 25-30 minutes). Remove from cookie sheet, allow to cool slightly and dust liberally with powdered sugar.

Try Eric's Fav No-Bake Rum Pumpkin Pie
Mix together:

Ingredients:
