I can remember Eric as a little kid scarfing the filling down with a soup spoon!!!! Easy and light after a big meal...it's pretty awesome...........

Try Eric's Fav No-Bake Rum Pumpkin Pie
Mix together:
3/4 cup brown sugar
1 envelope gelatin
1 tsp ground cinnamon
1/2 tsp salt
Separate 3 eggs reserving yolks and whites-
In a bowl combine:
3 egg yolks
3/4 cup milk
Combine the two mixtures and with constant stirring bring to a boil in a double boiler. Add 1 1/4 cup cooked pumpkin and (to taste) 1/8-1/4 cup dark rum to taste (Sailor Jerry's is most awesome). Mix well and let cool. Beat 3 egg whites with 1/3 cup powdered sugar. Fold egg whites into cooled pumpkin mixture and pour into cooked, cooled pie shell. Refrigerate until firm. Top with whipped cream.
